Drying
is a very important stage in processing. If it is not carried out
properly, the produce will begin to grow mould and other bacteria; it
can also lead to loss of flavour and aroma. We only dry a hand full of
products at our premises, the majority arrives having already been dried
from our suppliers.
Our drying process includes sun drying and
air-drying. During these processes we take great care to insure there is
no physical contamination. The produce, which requires drying, is spread
out onto hygienic mats, then covered with nets and placed under the sun
or in a well a ventilated room.
